This is the recipe for the sauce that my sister made for our Christmas brunch. It is delicious! We used it for waffles, but it would also be great for ice cream, cake, etc.
Caramel Pecan Sauce
1/3 cup margarine
1/2 cup sugar
1 cup light corn syrup
1 egg (whisk, then add to other ingredients as you gradually heat to prevent egg from forming little pieces in the syrup)
1 T vanilla
1 cup chopped pecans (toasted in oven first)
Combine margarine, sugar, corn syrup and vanilla in a 1 quart saucepan. Add egg gradually as mentioned above. Cook over medium heat, stirring constantly until mixture comes to a boil (8-10 min.). Stir in pecans just before serving.
